Ingredients
  • 8 pieces of chicken
  • 250 ml mayonnaise (1 cup)
  • 125 ml chutney (1/2 cup)
  • 10 ml mustard (1 tablespoon)
  • 65 ml smooth apricot jam (1/4 cup)
  • 187 ml water (3/4 cup)
  • 1 packet white onion soup powder (55g)

Directions
  1. Place chicken pieces in a casserole.
  2. Mix all of the other ingredients together.
  3. Pour over chicken.
  4. Bake for 60 minutes at an oven of 160 degrees celsius (320 - 375 deg F).

Hi, well I cooked this tonight (12-06-07) as promised. This was as one heck of a great dish. I enjoyed making it and had more fun eating it. Only 1 1/2 pieces left between two people. Strongly recommend to anyone to make this. I have posted this recipe on my site with additional Step by Step pics and a couple of suggestions. Just a great job to Liezel!!!!!!! Best, JJ.


Dish is seriously fantastic! I even added in 1/2 cup of rice to suck up the great juice. Probably could have added a little more.

I made this tonight & it was really good - I'll definitely be making this again. Great combination of flavors (I used mango chutney). Be aware that it makes a LOT of liquid, so if you're cooking less than the 8 breasts you might want to cut back on the sauce ingredients. I took pointsevenout's suggestion & added 3/4 cup of rice. I cooked it, covered, for an hour ... and the rice was still hard! After the chicken was all served out I put it back in the oven for another half hour (there was still a lot of liquid left). It still wasn't cooked all the way through. Next time I'll cook the rice separately.


This sounds really good,(albeit not lo-cal), and I can't wait to try it. I have a big package of chicken legs'n thighs in the freezer just waiting for this dish. Thank you for the post,Liezel. This was really fantastic and so easy! One time I didn't have chutney so I used some Okonomi sauce, which worked fine. I have also made it with Ginger Jam instead of Apricot Jam and that is good as well. A great tasting easy recipe!


I'm making this tonight - after re-reading all the comments, I might cut back on the water, cuz we like a thick sauce. Let you know how it turns out. ;')


This was the most incredible dish! Hubby and I both loved it. I made it using boneless skinless chicken breasts only. Followed the recipe to the T, but halved everything cuz I only used 4 breasts. It wasn't runny at all! I had prepared it about 3 hours in advance and let sit in fridge. I don't know if that contributed to the super moistness of the breasts, but I will definitely be making this again and again. Added my version in the step-by-steps. Thanks Liezel and all the great reviews that made me really want to make this. ;')


Made this again last night using apple cranberry chutney and with boneless pork loin chops. Was delicious as usual. I think this sauce is da bomb!!
Cooked for 1.5 hrs @ 350*


Made this last night with pork chops and it was wonderful. Lives up to it's reputation. Will try next week with chicken!

Alterations


First of all- I made this with Mango Chutney (didn't even know what that was!) Then I was missing a couple ingredients. Didn't have apricot jam or packet of onion soup powder...so I substituted sweet and sour sauce, dried onion flakes, onion powder and a chicken bullion cube dissolved in 2 T water. Also, by accident, I left out the 3/4 cup water. This chicken definitely lived up to it's name...was absolutely THE BEST!
