New England Baked Beans

- 2 Cups dried beans - 1, one lb bag (Navy, pea or Great Northern) shopping list
- ¼ lb. salt pork shopping list
- 1 t salt shopping list
- ½ C molasses shopping list
- ½ t powdered mustard shopping list
- 1 T brown sugar shopping list
How to make it
- Sort through beans (take out all the little stones and any shriveled beans)
- Cover with 6 cups of cold water.
- Soak overnite.
- Change water next morning, bring to boil, reduce heat and simmer until just knife tender.
- Drain, reserving liquid.
- Cut 2 medium onions in quarters, place in bottom of standard size bean pot or crock pot. Add drained beans to pot. Cut salt pork every ½ inch to rind, push into beans up to the rind, leaving rind exposed.
- Mix 1 C of liquid and remaining ingredients; pour over beans add reserved liquid to just barely cover the beans.
- Cover and place in 300 oven for 6 to 8 hours or until beans are tender and sauce is rich and dark caramel, adding reserved liquid as needed
- If using Crock pot allow about 10 to 12 hours, add liquid if needed and then cook until color is a rich and dark caramel. If doubling use a 5 1/2 qt crock pot
- A Dutch oven will also work perfectly in the oven if you don't have a bean pot

Yum! I LOVE homemade baked beans! Nothing wrong with spreading bacon slices over the top for the last hour of baking without the cover. Thanks for this deliicious recipe!

It is a not very sweet baked bean recipe. For my taste you can leave out the 1t salt because it did turn out with a little salty taste.
Was at the store to buy some salt pork and right next to it was some already cut up salt pork with some...morepointsevenout in Athens loved it
