Ingredients
  • 3 cups heavy cream
  • 3 tablespoons sugar
  • 1 tablespoon vanilla extract
  • 2 (9-ounce) packages chocolate wafer cookies
  • Unsweetened cocoa (or chocolate shavings)

Directions
  1. In a large bowl, beat cream, sugar and vanilla with an electric mixer on high speed until soft peaks form.
  2. On a flat serving plate, arrange 7 cookies side by side in a circle, keeping 1 cookie in the center.
  3. Spread with 1/2 cup whipped cream, making a 7-inch circle.
  4. Repeat with remaining cookies and cream, making 11 layers of cookies and ending with a layer of cream (there will be a few cookies left over). Cover with plastic wrap and refrigerate overnight.
  5. To serve, dust top lightly with cocoa powder or chocolate shavings.

YUM! ....and, easy too! Great post, Noir! (Only thing I changed....I added Bailey's Irish Cream to the whipped cream; but, then again, I add booze to ALL whipped cream :) )

It isn't even lunch time yet and I'm craving chocolate and whipped cream! This is all your fault! I love these kinds of wafer cakes. Its like a free-lance trifle.. heck, just give me a fork and stand back!!!

This is a different version of the "roll cake" that is on the chocolate wafer package. I've been making that one for years. This version is so elegant! Yes, Krum and Kukla, I would add some form of liqueur, too.

Believe it or not, Wafer Wonderland Cake does slice well, but do it slowly. :) I use a Le Creuset 12" Slender Spatula to cut it with...try it.

I think I'll try this with a cherry liquer..and some chopped cherries in the layers..now oh my did someone say watch this disappear..
