How to make it

  • Heat oil in large frying pan over high heat. Add mushrooms and cook, stir often for 5 minutes or until slightly softened.
  • Add stock and bring to boil. Reduce heat to medium and simmer uncovered for 10 minutes.
  • Meanwhile cook pasta.
  • Stir green shallots and thyme into sauce, cook 1 minute or until shallots are tender. Remove from heat and stir in sour cream.
  • (I PUT A LITTLE BIT MORE SOUR CREAM TO TASTE)
