How to make it

  • Preheat oven to 350 degrees F.
  • Cream butter and sugar together.
  • Add one egg at a time, mixing well after each addition.
  • Add flour gradually.
  • Mix in lemon extract.
  • Pour mixture into a large Bundt pan (I use my Angel Food Cake
  • Pan), greased with Crisco shortening and floured, to about 1 to
  • 2 inches from the top.
  • Bake for one hour or until cake test done. Allow cake to cool
  • thoroughly.

    I'd add some baking powder, vanilla and grated lemon peel in place of the extract as others have suggested.

    I was looking for something to use up all these farm eggs piling up around here. What a great way to use a dozen! I substituted a 1 oz bottle of eggnog extract for the lemon. Oh my.... delicious! The cake is huge tho... about 3 inches over my big angel pan! I'll try freezing half and we'll see how it freezes.

    I'm using lemon zest and juice instead of the extract because I just don't like the taste of extracts. I may use lemon essence.
