Ingredients

How to make it

  • preheat oven to 400 degrees
  • bake potaotes for one hour or until tender
  • while potatoes are baking cook the bacon in a skillet until crisp
  • remove bacon from skillet to paper towels
  • drain drippings reserving 1 tablespoon
  • in drippings saute onions until tender and set aside
  • when potaoes cool enough to handle cut in half lenghtwise
  • scoop out pulp leaving about a 1/8 inch shell
  • in a bowl beat the potato pulp sour cream and milk until creamy
  • stir in the onions american cheese and 1 cup of the bacon
  • spoon mixture bake into the shells
  • place on a baking sheet and return to the oven for 25 minutes
  • remove from oven and sprinkle on the cheddar cheese remaining bacon and green onion slices
  • return to the oven just until the cheddar cheese is nicely melted
