Cabbage Creole Recipe
This is an awesome dish from my wife's cookbook from work. It is originally from a man in Arkansas I hope that he don't mind but I think that it is worth passing on.

Ingredients
  • 1 head of cabbage
  • 1/2 lb ground beef
  • 1/2 lb ground pork sausage
  • 1 lg onion (chopped)
  • 1 bell pepper (chopped)
  • 1 can Rotel diced tomatoes and chillies ( hot or mild)
  • 1 can diced tomatoes
  • 1 can cheddar cheese soup

Directions
  1. Brown ground beef, sausage, onion and peppers in a skillet and drain, then put in a large pot
  2. Cut up cabbage and add to pot with meat
  3. Add cheddar cheese soup, Rotel, tomatoes, and fill with water to cover cabbage
  4. Cook on medium heat for one hour or until the desired tenderness
  5. You can change the amounts of ingredients to your tast. My wife uses 2 cans of hot Rotel and 2 cans cheddar cheese soup.

Looks good! I think I'll sub ground chicken breast for the other meats and cream of chicken or mushroom (low-fat versions) for the cheese soup...it is just what I have in the pantry. Thanks for the great idea!
