How to make it

  • Blend sugar and shortening, add drained pineapple, salt and vanilla mix well
  • Add dry ingredients
  • Mix well
  • Drop by teaspoonful onto greased cookie sheet
  • 350 oven about 10 minutes

    I remember these! Mum would make them when we were little. They were and, still are, my favorites!!! The kids at our boys' school LOVED them and asked for the recipe!!! I renamed them Grandma Gus's Pineapple Cookies!

    I made a version of these yesterday that calls for brown sugar instead of white, and they are very nice cookies. I thought they'd be excellent for potluck or church supper.
