Italian broiled shrimp

- 1 1/2 lbs uncooked shrimp shopping list
- 1/4 lb butter shopping list
- 1/2 cup evoo (extra virgin olive oil) shopping list
- 6 shallots (also known as eshallot, griselle etc) or use a any sweet onion minced fine shopping list
- 1 clove garlic (big clove or use 3 small) minced fine shopping list
- 1/2 lemon shopping list
- salt and pepper to taste shopping list
- 1 cup dry white wine (use only a wine you would drink) shopping list
- 1 tbl chopped parsley for garnish shopping list
How to make it
- wash the shrimp in cold water
- snip shells open from head to tail along the center of the back and remove the black line (this is the remains of what the shrinp has eaten is a nice way to put it)
- do not remove the shells
- dry thoroughly
- melt butter with olive oil in a large shallow casserole (large enough to accomodate the shrimp but not monstrous)
- add shallots and garlic to the butter mix well
- place shrimp in the casserole and roll til they are all coated with the butter and not on top of each other
- squeeze lemon over them
- place under medium broiler flame or low broiler for 5 minutes
- sprinkle lightly with salt and a bit heavier on the pepper and turn over
- broil 5 minutes more, remove from oven (shrimp will be pink and white when done)
- sprinkle with salt and pepper and add wine
- return to broiler for 2 minutes
- sprinkle with parsley and serve
