Italian Broiled Shrimp Recipe
Savory sweet garlic taste, easy and looks great. Present on a bed of romaine or leaf vegetable of your choice.

Ingredients
  • 1 1/2 lbs uncooked shrimp
  • 1/4 lb butter
  • 1/2 cup evoo (extra virgin olive oil)
  • 6 shallots (also known as eshallot, griselle etc) or use a any sweet onion minced fine
  • 1 clove garlic (big clove or use 3 small) minced fine
  • 1/2 lemon
  • salt and pepper to taste
  • 1 cup dry white wine (use only a wine you would drink)
  • 1 tbl chopped parsley for garnish

Directions
  1. wash the shrimp in cold water
  2. snip shells open from head to tail along the center of the back and remove the black line (this is the remains of what the shrinp has eaten is a nice way to put it)
  3. do not remove the shells
  4. dry thoroughly
  5. melt butter with olive oil in a large shallow casserole (large enough to accomodate the shrimp but not monstrous)
  6. add shallots and garlic to the butter mix well
  7. place shrimp in the casserole and roll til they are all coated with the butter and not on top of each other
  8. squeeze lemon over them
  9. place under medium broiler flame or low broiler for 5 minutes
  10. sprinkle lightly with salt and a bit heavier on the pepper and turn over
  11. broil 5 minutes more, remove from oven (shrimp will be pink and white when done)
  12. sprinkle with salt and pepper and add wine
  13. return to broiler for 2 minutes
  14. sprinkle with parsley and serve
