How to make it

  • wash the shrimp in cold water
  • snip shells open from head to tail along the center of the back and remove the black line (this is the remains of what the shrinp has eaten is a nice way to put it)
  • do not remove the shells
  • dry thoroughly
  • melt butter with olive oil in a large shallow casserole (large enough to accomodate the shrimp but not monstrous)
  • add shallots and garlic to the butter mix well
  • place shrimp in the casserole and roll til they are all coated with the butter and not on top of each other
  • squeeze lemon over them
  • place under medium broiler flame or low broiler for 5 minutes
  • sprinkle lightly with salt and a bit heavier on the pepper and turn over
  • broil 5 minutes more, remove from oven (shrimp will be pink and white when done)
  • sprinkle with salt and pepper and add wine
  • return to broiler for 2 minutes
  • sprinkle with parsley and serve
