We eat a lot of Lobster and other seafood at my house, this has got to be one of my fave recipe's.

Ingredients
  • 4 5-ounce fresh or frozen rock lobster tails (I use fresh)
  • 1/3 cup butter
  • 2 tablespoons snipped fresh chives
  • 1 teaspoon finely shredded lemon peel
  • Lemon wedges

Directions
  1. Thaw lobster, if frozen. Rinse lobster; pat dry with paper towels. Butterfly tails by using kitchen shears or a sharp knife to cut lengthwise through centers of hard top shells and meat, cutting to, but not through, bottoms of shells. Press shell halves of tails apart with your fingers.
  2. For sauce, in a small saucepan melt butter. Remove from heat. Stir in chives and lemon peel. Remove 2 tablespoons of the sauce; set the remaining sauce aside.
  3. Lightly grease the rack of a gas grill. Preheat grill. Reduce heat to medium. Brush lobster meat with some of the 2 tablespoons sauce. Place lobster, meat sides down, on the grill rack directly over heat. Cover and grill for 6 minutes. Turn lobster. Brush with the rest of the 2 tablespoons sauce. Cover and grill for 6 to 8 minutes more or until lobster meat is opaque.
  4. Heat the reserved sauce, stirring occasionally. Transfer the sauce to small bowls for dipping and serve with lobster. If desired, serve with lemon wedges.
  5. To grill lobster on a charcoal grill, prepare as above except cook tails directly over medium coals for 6 minutes. Turn; brush with remaining sauce and cook 6 to 8 minutes more or until lobster meat is opaque.

OK, can I give it a 6 ? This was fantastic. I had to innovate a little since I live in a small town and the nearest Kroger is a 15 minute drive. So, I didn't have a lemon or chives. Hmmm.. had some green onions so I chopped up some of the tops for chives. Had some dried lemon peel in the spice cabinet.. used that. Shucks, it made no difference.. the lobster turned out fantastic. Dariana this is a winner!

i would make this tonight if i had a good source for lobster in the city....

Softgrey, Lobster cooks very fast. I boil it almost exactly 10 minutes and then grill it no more then the 5-6 minutes per side on the grill for a 1 pound tail.


This was a great change from the traditional melted butter. We didn't grill it (though that looks awesome). We're in Maine, so it's too cold to grill. I'll have to remember this in the summer time. Also, I didn't have fresh lemons, just lemon juice. I put that in with the green onions and it was fantastic! My family and guests loved the change! Thanks! :)


Wow girl! This is exactly what I've been looking for. Lobster is an all time fav, and I've always been to skittish about doing it at home. Can't wait...I have a new grill (the big green egg) and were going to be using it 3-4 times a week...this is FIRST!

Alterations


I forgot to add this, I always use fresh Lobster tail we purchase at a local fish house. And, I boil them first in salt and lemon water about 10 minutes before taking out to the grill. I butterfly them immediately after removing from the lemon boil then take them out to the grill.
