Tony And Luigis Minestrone Soup Recipe
Very flavorful soup from a very popular restaurant that was opened in the 50's. Closed a few years ago. This recipe is always requested in our local paper food section. I was fortunate enough to have worked there.

Ingredients
  • 2 medium carrots
  • 1 1/2medium yellow onions
  • 4 stalks celery
  • 3 large potatoes
  • 1 1/2 gallons water
  • 24 ounces tomato paste
  • 48 ounces diced tomatoes, in juice
  • 2 ounces ham base
  • 4 ounces chicken base
  • 1/2 Tbl basil
  • 1/2 tsp oregano
  • 1 Tbl granulated garlic
  • 8 ounces tubetti

Directions
  1. Chop all vegetables into 1/4" diced cubes. Cook tubetti al dente drain, set aside. Boil the water. Add all ingredients, except tubetti to the boiling water. Return to boil, reduce heat to simmer. Simmer for 2 hours. Add tubetti. Enjoy with a good crusty Italian bread.
