Sawmill Gravy Appalachia Recipe
The old classic recipe from Appalachia for Sawmill Gravy

Ingredients
  • 1-1/2 tablespoons fried meat grease; ham, sausage, or bacon
  • 3 tablespoons flour
  • 2 tablespoons hot water
  • 1 cup heated milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon fine ground black pepper

Directions
  1. Add flour to the melted fat in hot pan and stir to make a brown roux.
  2. Thin the mixture with a little hot water and add heated milk, salt and pepper.
  3. Stir until thick. Add crumbled fried sausage for a real treat.
  4. Serve over hot home made biscuits.

I grew up on mashed potatoes and gravy. I was exposed to the method of stirring flour and water (shaken together) into the meat juice to make gravy.
I've never made a roux. I need to try this. Thanks.
