How to make it

  • Core, and slice of the top of the tomatoes.
  • Scoop out insides and reserve
  • In large skillet, swirl in a little bit of oil and squeeze out the hot turkey sausage out of its casing into the hot fat and cook thoroughly, crumbling it up into little pieces.
  • Add the reserved tomato, onions, pepper and garlic, cook three or four minutes.
  • Season with salt pepper.
  • Remove from heat and cool
  • Add chopped basil and mozzarella.
  • Stuff into tomato shells
  • Place in oiled square baking dish.
  • top with a bit of oil and sprinkle generously with parmesan and bake in 350 degree oven for at least 20 minutes. Extra filling can sit around the tomatoes and cook without burning if you add a little tomato juice or broth to the bottom of the pan.

    This sounds like a great idea for the end of the summer when there's a tomato glut and you're sick of tomato sandwiches. Thanks for the healthy alternative!
