Do you like fudge as much as I do? Well, here's a fudge recipe that will send you over the top!!!

Ingredients
  • 2 cups sugar
  • 1 cup whipping cream
  • 3 Tbsp. butter
  • 1-1/2 squares unsweetened chocolate
  • Note: I have used unsweetened, milk and white chocolate for this recipe.
  • 2 Tbsp. white Karo syrup
  • 1-1/2 tsp. vanilla
  • 1 cup chopped pecans (optional)
  • Note: Instead of adding pecans I like to add miniature marshmallows!!! I have even added a combination of maraschino cherries(well drained and quarted) plus marshmallows.

Directions
  1. Grease sides and bottom of 3 qt. heavy saucepan.
  2. Add sugar, cream, butter, chocolate and Karo syrup.
  3. Stir, being careful not to get sugar mixture on greased sides of pan. Bring to a boil over medium heat and cook to 230-238 degrees F on candy thermometer, stirring occasionally to keep candy from sticking.
  4. Remove from heat, pour candy immediately into mixing bowl.
  5. Add vanilla and beat with mixer until candy loses the gloss.
  6. Add pecans(optional) and pour into greased an 8 x 8 inch pan.
  7. Cut when cool.
