How to make it

  • Mix together mashed potatoes, egg, flour and garlic salt. Stir like mad to blend.
  • Melt 1Tb. butter in skillet. (cast iron preferably) over low heat. Drop by spoonfulls into melted butter . Drop enough to flatten out to about a 4 inch pancake that is about 1/2 to 1 inch thick.
  • Sprinkle cheddar cheese onto the mashed potatoe cake. Spoon more potatoe over the cheese and cook till the bottom is brown (about 10 minutes)...flip and cook other side till brown...about another 10 minutes will do. The 2nd tablespoon of butter is for the second side.......

    We had these all the time when I lived at home and I loved them -- I haven't made them for years and my Irish husband would love them!! I remember loving them with left over gravy of any kind, sour cream, or my favorite topping, applesauce! Will have to make them soon!!
