How to make it

  • Squeeze cherry tomatoes with your hands in a mixing bowl and tear them apart into smaller pieces. Don't wear your best shirt when you do this. You can cut the tomatoes with a knife but crushing them this way makes sure you get a bunch of nice juices in your salad.
  • Remove pit from the olives; crushing them a little first with a pestle or a knife makes it easier. Of course you can buy olives without the pit but the whole ones have more taste.
  • Tear olives apart into smaller pieces and mix them with the tomatoes.
  • Add the basil, cayenne, oregano and balsamic vinegar.
  • Toast some ciabatta bread.
  • Put basil salad on the bread and add half a piece of mozarella on top.
  • Pour some olive oil on the mozarella, sprinkle some parmesan cheese and enjoy!

    This looks incredible! I have no fresh basil right now, just snow on the ground but I can get it at the grocery store. Basil has such a wonderful flavor.
