These are so simple and brilliantly delicious - great recipe, Debra! I love them as is and have made them many, many times...but one time I added in some crab meat, grated Asiago cheese and dusted the tops of the stuffed mushrooms with more grated Asiago - delish! That's what I love about this recipe - it's perfect and it's adaptable. Great post! *Smiles*

My cousin makes a recipe very similar to this (I think she just puts cream cheese into the mushroom caps, and then she pours melted butter and sliced green onions on top), and it's delicious! I will try your variation - I like the idea of not wasting the mushroom stems and also having the onion flavor in the filling.

Oh, I just remembered that my cousin also sprinkles some mozzarella on top when she bakes them - I like that touch as well.

Sounds great! I agree with the bacon...yum! I think it would be a nice twist to add some finely diced apple into the cream cheese mix...with the bacon on top!
