How to make it

  • Preheat oven to 300 degrees
  • Wash and dry the kale (either w/a towel or a salad spinner); cut off the thick stem portion of the leaf; you can leave them whole or cut them into 3-4 inch pieces
  • Line a cookie sheet with some parchment paper
  • Lightly coat the kale with olive oil then place on the parchment paper
  • Bake for 20 minutes
  • Add salt to taste
  • They're crunchy, salty, and healthy

    I forgot to mention that I coated the kale by tossing everything together in a very large bowl. And you need to remove not only the stems but ALL the spines, because they become very hard when they are baked.

    I made this today and it was VERY good! I made it as written except I added 1 tsp. of apple cider vinegar with the olive oil (2 Tbls.) and the salt (1/2 tsp. kosher). I baked it on 2 large cookie sheets at 350* for 10 minutes. Then I tossed them and baked them again for another 9 minutes...then they were perfectly crispy! They taste just like broccoli! I can't wait to make these for guests! I added my photo.

    I use a basting brush and brush the oil onto the kale. If you don't have a basting brush, any old paint brush will do, or you can spray it on with a spray bottle :)

    What a great idea! We make carrot chips and sweet potato chips all the time, but I would love to expand from root vegs and introduce greens. I tried a kale soup with my toddler, what a disaster that was.

    Not sure that my child would love to eat these, because they are still green. haha....but I cannot wait to cook this recipe for myself! Sounds really great. Great source of iron for me.
