Ingredients

2 pounds American cheese

4 cups beer (5 if your a sampler cooker)

8 cups chicken stock

1/8 - 1/4 cup finely chopped onion (according to taste)

1/2 cup butter (soft)

1/2 cup flour

dash white pepper (I prefer more than a dash, but it's to taste)

Freshly popped popcorn

Directions

Grate all cheese

Bring beer to a boil in large pan, reduce by approximately 1/2. Add chicken stock, pepper and onion, bring back to soft boil.

In a separate dish, combine butter and flour and mix into a paste. Stir into the mixture. Boil for a few minutes longer

Remove from heat. Add the cheese and stir well

After serving into bowls, scattter freshly popped popcorn over the top. Not only does it hold in the heat, it is DELICIOUS

There is no other way to eat Beer Cheese Soup than topped with a bunch of fresh, salty popcorn! This recipe sounds perfect - can't wait to give it a try...one of my favorite soups.
