How to make it

  • Grate all cheese
  • Bring beer to a boil in large pan, reduce by approximately 1/2. Add chicken stock, pepper and onion, bring back to soft boil.
  • In a separate dish, combine butter and flour and mix into a paste. Stir into the mixture. Boil for a few minutes longer
  • Remove from heat. Add the cheese and stir well
  • After serving into bowls, scattter freshly popped popcorn over the top. Not only does it hold in the heat, it is DELICIOUS
  • Make 12 cups

    There is no other way to eat Beer Cheese Soup than topped with a bunch of fresh, salty popcorn! This recipe sounds perfect - can't wait to give it a try...one of my favorite soups.
