Apple Pound Cake

- 2 cups sugar shopping list
- 1-1/2 cups vegetable oil shopping list
- 3 eggs shopping list
- 2 teaspoons vanilla or good quality brandy or Irish whiskey shopping list
- 3 cups flour shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon baking soda shopping list
- 2 or 2 cups medium apples, peeled, cored and finely chopped shopping list
- Note: You can use any apple you want. I prefer Spartan, Macintosh or Granny Smith. Spy are more for apple pie but do the job, shopping list
- caramel Glaze: shopping list
- 1/2 cup butter or margarine shopping list
- 1/2 cup packed brown sugar shopping list
- 2 teaspoons homogonized milk shopping list
- In a saucepan on low to medium low heat melt butter / margarine. shopping list
- Add brown sugar and stir until completely disolved. shopping list
- Add milk and bring to a gently simmer. shopping list
- Do not boil as the milk may scortch. shopping list
How to make it
- Pre-heat oven to 350 degrees F.
- Grease and flour a bundt pan
- Beat sugar, oil, eggs and vanilla (Brandy / Irish Whiskey) in large bowl until fluffy
- Stir in sifted dry ingredients.
- Gently blend in apples.
- Pour batter into prepared bundt pan
- Bake for approximately 55 to 60 minutes or until toothpick inserted in the center comes out clean.
- Cool for 15-20 minutes and remove from pan.
- Place on fancy cake plate.
- Drizzle caramel glaze over warm cake.
- Serve with whipped cream or ice cream.
