There is a similar pound cake recipe posted in the group but this recipe is from my personal recipe collection. I hope you enjoy it!

Ingredients
  • 2 cups sugar
  • 1-1/2 cups vegetable oil
  • 3 eggs
  • 2 teaspoons vanilla or good quality Brandy or Irish Whiskey
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 or 2 cups medium apples, peeled, cored and finely chopped
  • Note: You can use any apple you want. I prefer Spartan, Macintosh or Granny Smith. Spy are more for apple pie but do the job,
  • Caramel Glaze:
  • 1/2 cup butter or margarine
  • 1/2 cup packed brown sugar
  • 2 teaspoons homogonized milk
  • In a saucepan on low to medium low heat melt butter / margarine.
  • Add brown sugar and stir until completely disolved.
  • Add milk and bring to a gently simmer.
  • Do not boil as the milk may scortch.

Directions
  1. Pre-heat oven to 350 degrees F.
  2. Grease and flour a bundt pan
  3. Beat sugar, oil, eggs and vanilla (Brandy / Irish Whiskey) in large bowl until fluffy
  4. Stir in sifted dry ingredients.
  5. Gently blend in apples.
  6. Pour batter into prepared bundt pan
  7. Bake for approximately 55 to 60 minutes or until toothpick inserted in the center comes out clean.
  8. Cool for 15-20 minutes and remove from pan.
  9. Place on fancy cake plate.
  10. Drizzle caramel glaze over warm cake.
  11. Serve with whipped cream or ice cream.

I just bought a bundt pan too, I thought I was going to have to borrow one from one of my new friends, but I have my own now. In fact, it is laying right behind me!



This looks really good! I might have a bundt pan laying around here somewhere too.


Do you recommend any particular variety of apple?
