Blueberry Cobbler Or Thank Goodness Summers Here Recipe
This is an easy cobbler to prepare. Spoon fresh whipped cream on top and enjoy.

Ingredients
  • 1 quart blueberries
  • 2/3 cup sugar
  • 2 tsp. grated lemon zest
  • 1 1/2 cups water
  • 1/4 lb. sweet butter
  • 1 cup sugar
  • 2 egss, slightly beaten
  • 2 cups all-purpose flour
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 2 eggs 1 cup whole milk
  • 3 tsp. vanilla extract
  • Whipped cream to serve on the side or on top OR ice cream

Directions
  1. Boil and then simmer the first four ingredients for three minutes.
  2. Cream the butter and 1 cup sugar.
  3. Mix in the eggs until just blended.
  4. Combine the dry ingredients.
  5. Mix the vanilla into the milk.
  6. Alternately add the dry and wet ingredients, 3:2, until just blended.
  7. Grease an oblong Pyrex or other 3 qt. baking dish well. Pour in the cooked berries. Spoon the batter over the top, this is fine to look kind of lumpy rather than smooth on top.
  8. Bake 30 minutes in a preheated 350 degree oven
  9. This is best served warm.
  10. Serve with your choice of whipped cream or ice cream.

Used the rest of my biscuit mix, that I keep in the fridge, instead of flour. Hope it turns out. It will have a double dose of baking powder in the dish because my biscuit mix already had some in it as well as butter pieces.

I've actually prepared this in two containers - the batter and then the berries, kept in the refigerator, and just assembled it when guests arrive and then pop into the oven while we're dining. Just keep an eye on it when baking as you're using chilled ingredients if you try that, too. I've also divided this recipe into two 9" square pans instead of the large oblong. Baking is fun.


You get an A+ and 2 gold stars. Mothers favorite berry is blue. This turned out like a thin pancake on top with the berries jelled together. I initially thought the recipe was too soupy to come together well, but turned out excellent and no baking powder taste. Made pics. I'll hold them for ransom until you send me your addy.


I love blueberries. Sigh.
