This is an easy dinner or brunch dish that you can put most any meat into that you have left over. It's also good because most of us have the ingredients already on hand!

I make a quiche similar to this, but when I don't have cubed ham on hand, I use the ham & bacon flavored sausage which is something that cooks quickly and makes enough for at least two. It's one of our traditional Christmas Eve dishes. My kids love it, and I love that it's easy.

I was putting it off because I was afraid of making a pie crust -- but look what you point out -- they have them at the grocery store! duh.
