For all the Mom's & Dad's who run around buying, shopping and doing for their Family during the Holiday season, a little *Happy Cupcake*. Great when you want to put your feet up and have a cup of coffee and starting those Christmas Cards! Enjoy! :)

Ingredients
  • **Here's what you need:
  • 1 box of cake mix (your choice of flavor)
  • 1¼ cup strong Coffee ( with Irish Cream, Amaretto, Vanilla etc. flavoring)
  • 1/3 cup of cooking oil
  • 3 eggs
  • 2/3 cup packed light brown sugar
  • ½ cup flour
  • 3 Tablespoons of margarine, melted
  • 2 teaspoons of cinnamon
  • Cupcake wrappers and pan
  • **Filling:
  • 1 8 ounce package of cream cheese
  • 1 egg
  • 1/3 cup of granulated sugar
  • One 6oz. package of milk chocolate chips

Directions
  1. Pre-heat oven to 350°F
  2. Mix cake mix with brown sugar, flour, and cinnamon.
  3. Add eggs, cooled coffee, and oil.
  4. Mix well with an electric beater, then, on high, beat for 2-3 minutes.
  5. Spoon 2 heaping tablespoons of batter in each wrapper and follow with a teaspoon of the filling**:
  6. For the Filling, with an electric beater, combine cream cheese, egg and sugar together until thoroughly blended, then, mixing by hand, add chocolate chips.
  7. Bake 20-30 minutes.
  8. No need to ice due to filling.
  9. Serve with a nice cup of Coffee and start wrapping those Holiday Gifts!
