Cheese-stuffed Chicken Breasts Recipe


CHEESE-STUFFED CHICKEN BREASTS Recipe
This is an easy and tasty way to serve a fairly healthy main course to your family. Kids love this, as well as anyone I’ve served it to. It screams for variations. How about Blue Cheese? Or some other soft cheese. I hope you enjoy it. pb

Ingredients
  • 4 Skinned and boned chicken breasts
  • 4 3x1 inch slices Monterey Jack Cheese
  • 1 or 2 eggs
  • 2 or 3 (or more as wanted) teaspoons grated Parmesan cheese
  • 1 teaspoon snipped parsley or cilantro
  • All-purpose flour
  • Canola Oil
  • Salt and pepper to taste or use bouillon instead of salt

Directions
  1. In thickest side of each chicken piece, cut a pocket just large enough for the cheese slice
  2. Place a cheese slice in each pocket
  3. Beat together egg, Parmesan cheese, parsley bouillon granules (or salt) and dash of pepper.
  4. Coat chicken with flour and dip in egg mixture.
  5. Brown in hot oil for 2 or 3 minutes on each side.
  6. Use a nonstick pan, and make sure the oil is hot so the batter doesn’t stick in the pan.
  7. Transfer to a baking dish.
  8. Bake in a 375 degree oven for 10 to 15 min or until the chicken is done. (Depends on the thickness of the breasts)

Sounds like my kind of chicken recipe.


Sounds great - i LOVE cheese. how about a little sauce to go along with it? a lovely tomato sauce (spice up with some left-over champagne or crémant - that why it is called 'sauce' :-) ) would go soooo well with it.

This sounds wonderful and versatile. Sounds good as is, but yes...blue cheese would be good or feta. Some chopped roasted walnuts in the mix... Great post again!

Alterations


How about my Virgin Blue cheese ... very tasty ... and I think would go well. I've found a place that sells Au version of Jack cheese, but after having looked at the recipe I think the blue would work excellently.
