How to make it

  • Cool bacon completely before adding it to the shredded cheese and diced scallions.
  • Blend in just enough mayonnaise to hold the spread together – don’t overdo the mayo!
  • Chill well and serve with sturdy crackers, baguette slices, fried pita triangles, pretzel chips, etc.

    This recipe comes closest to the one I tasted years ago from a woman from Illinois.
    That had a lb of bacon, lb. of cheese and a small yellow onion.
    I'm pretty sure it just had yellow mustard for binding but maybe mayo too.
    She ground up the whole thing in one of those old food grinders which did help to get rid of some of that bacon fat!
