SOPA DE ALBONDIGAS

- 1/2 pound lean ground beef shopping list
- 1/2 pound lean ground pork shopping list
- 2 corn tortillas, soaked in water shopping list
- 1 egg beaten shopping list
- 1 small onion finely chopped shopping list
- salt and pepper to taste shopping list
- 6 cups beef broth, I use soup base the commerical kind shopping list
- 1 cup tomato puree shopping list
- 1 medium onion chopped shopping list
- 1 clove garlic minced shopping list
- 1 teaspoon of more cumin shopping list
- 1 teaspoon chili powder shopping list
How to make it
- Put soaked drained tortillas in the blender with 1/4 cup water and blend well.
- Mix meats with tortillas, egg and the small onion
- Form tiny walnut-sized balls
- Make a broth with the remaining ingredents
- Bring to a boil and simmer for 10 minutes
- Gently add the meatballs, a few at a time
- When it starts to simmer again, cover and cook for about an hour
- Serve hot and garnish with cilantro and chopped fresh onion, chopped tomatoes and lime wedges...
- Try this ... it is really good!
