This is a good bayou country style chicken meal...great with turnip greens or mustard greens , cracklin corn bread or just plain ole' corn bread.....heck just sop with your biscuit.....this is good!

Ingredients
  • 1 (6 lb) stewing chicken, cut up
  • 1 1/2 cups all-purpose flour
  • vegetable oil
  • 3 cups chopped onions
  • 6 1/2 cups rich chicken broth
  • 1 teaspoon salt
  • 1 clove garlic..
  • 1 cup of green onions
  • 1 cup parsely
  • 1 1/2 teaspoon cayenne
  • 1/2 teaspoon black pepper
  • hot rice or boiled potatoes

Directions
  1. Combine seasoning mix ingredients.
  2. Genereously sprinkle both sides of the chicken pieces with about 4 t of the seasoning mix.
  3. Combine remaining seasoning mix with the flour in a paper or plastic bag.
  4. Generously dust each chicken piece with the seasoned flour.

  7. shake off some of the flour...not leaving it heavy on the chicken.
  8. In large black cast iron pot , heat 1 inch of oil to 230-250.
  9. Cook chicken pieces in the hot oil, maintaining the oil's temp to a level just hot enough for the chicken to fry. a light brown.
  10. Cook pieces of similar size together to ensure even cooking.
  11. Cook with skin side down about 20 min, then on the other side until tender, about 15 min more
  12. Saute' the onions , parsely .
  13. Instead of using water Use the Chicken Broth pour enough to help make the gravey..Pour the broth over the fried chicken.
  14. Simmer uncovered over how heat for 1 hour (or longer if the chicken needs further tenderizing), stirring often.
  15. Serve immediately over rice or cream potatoes.

OMG... this sounds so good.... I have a biscuit or two laying around to sop with... LOL


Oh yeah... My granny made chicken like this... along with black eyes or limas... and cornbread! I can feel a couple more pounds coming!


This sounds so delicious, and especially with cracklin cornbread! Think I will make this tomorrow for supper! :)
