How to make it

  • Place oil in a 9-inch cast iron skillet, and heat in a 425 degree oven 4 minutes.
  • Combine cornmeal and flour in a large bowl; make a well in the center of the mixture.
  • Stir together eggs, buttermilk and cracklings; add to dry ingredients, stirring just until moistened. Pour over melted butter over the top of cornbread mixture
  • Bake at 425 degrees for 25 to 30 minutes or until golden brown.
  • This is optional :
  • You may add instead of the cracklins use bacon ...fry bacon then place on a paper towel and mash them into crumbs add this into your mixture.

    Mother likes cornbread and cracklings but not this recipe. Said the cracklings have the consistency of pencil erasers.

    Going to have to toast the cracklings to try to crisp them up a little if I try this recipe again.

    I don't think there is anything wrong with this recipe. It is very close to the cornbread recipe I use. The problem lies in the cracklings.
