Cracklin Cornbread

- 1/4 cup bacon grease or oil shopping list
- 2 tsp of melted butter shopping list
- 2 cups self-rising yellow cornmeal shopping list
- 1/4 or alittle less of sugar ( this is opt. if you like a sweet cornbread) shopping list
- 1/2 cup all-purpose flour shopping list
- 2 1/2 cups buttermilk shopping list
- 2 large eggs, lightly beaten shopping list
- 1 cup cracklings*(or use one cup of crumbs from the cracklings so you will not have the hard skin .) shopping list
- also make sure your crackling are fresh! shopping list
How to make it
- Place oil in a 9-inch cast iron skillet, and heat in a 425 degree oven 4 minutes.
- Combine cornmeal and flour in a large bowl; make a well in the center of the mixture.
- Stir together eggs, buttermilk and cracklings; add to dry ingredients, stirring just until moistened. Pour over melted butter over the top of cornbread mixture
- Bake at 425 degrees for 25 to 30 minutes or until golden brown.
- This is optional :
- You may add instead of the cracklins use bacon ...fry bacon then place on a paper towel and mash them into crumbs add this into your mixture.
