Thai Chicken Recipe
A 'festive' recipe from the Rival Crock Pot Family Favorites.

Ingredients
  • 2 1/2 lbs chicken pieces
  • 1 cup hot salsa
  • 1/4 cup peanut butter
  • 2 T lime juice
  • 1 T soy sauce
  • 1 t fresh minced ginger
  • Hot cooked rice
  • 1/2 cup chopped peanuts
  • 2 T chopped fresh cilantro

Directions
  1. Place chicken in slo-cooker. Mix together salsa, peanut butter, lime juice, soy sauce and ginger; pour over chicken.
  2. Cover; cook on LOW 8-9 hours or on HIGH 3-4 hours or until done.
  3. Serve chicken and sauce over rice; sprinkle with peanuts and cilantro.

Love this and it is on the menu plan for the week. Way easier to do and more economical than take out!! I'm all for saving money today.
