Mexican Rice

- 1 cup long grain white rice shopping list
- 1 lg tomato or 1 - 14oz can diced tomatoes shopping list
- 1 cup carrot shopping list
- 1 cup cellery shopping list
- 2 - 14oz cans chicken broth shopping list
- 6-8 cloves garlic (or more to taste) shopping list
- 1 cup chopped white onion shopping list
- 2 tblspoons cumin shopping list
- 1 lb chicken thighs shopping list
- 2 tblspoons olive oil shopping list
How to make it
- Skin and de-bone chicken. cut into 2 inch pieces. arrange in the bottom of a 9x13in baking dish.
- dice the carrot, onion, cellery, garlic and tomato.
- in a large skillet, saute uncooked rice, garlic, onion, carrot and cellery in the olive oil. continue until the rice begins to turn brown.
- stir in the tomato.
- add the chicken broth.
- stir in the Cumin and let the broth heat until simmering.
- taste test the broth and add more Cumin if desired.
- pour the mixture over the uncooked chicken and cover tightly with foil.
- cook in a 350deg oven for 1hr and 15 min. the liquid should all be evaporated when the dish is done.
