How to make it

  • Skin and de-bone chicken. cut into 2 inch pieces. arrange in the bottom of a 9x13in baking dish.
  • dice the carrot, onion, cellery, garlic and tomato.
  • in a large skillet, saute uncooked rice, garlic, onion, carrot and cellery in the olive oil. continue until the rice begins to turn brown.
  • stir in the tomato.
  • add the chicken broth.
  • stir in the Cumin and let the broth heat until simmering.
  • taste test the broth and add more Cumin if desired.
  • pour the mixture over the uncooked chicken and cover tightly with foil.
  • cook in a 350deg oven for 1hr and 15 min. the liquid should all be evaporated when the dish is done.
