Putting veggies in a casserole was the only way I could get my daughter to eat them when she was young...Now she makes this .

Ingredients
  • 1 1/2 cups macaroni
  • 1 1/2 lb. hamburg
  • 1 small eggplant, peeled and chopped into 1/2 i nch pieces
  • 1/2 cup chopped onion
  • salt and pepper to taste
  • 1/2 tsp. basil
  • 1 cup sour cream
  • 1 cup shredded cheese(I use Italian blend or even cheddar sometimes)

Directions
  1. Cook pasta according to directions
  2. Brown hamburg and onion.
  3. Drain off fat
  4. Add remaining ingredients and macaroni
  5. Put in a buttered casserole dish and bake, uncovered for 45 minutes at 350

This sounds quick and easy. I would assume you bake that at 350F? Mostly everything is. Thanks for the post!

What am I missing? I'm looking at the flavors tags and see eggplant but don't see any in this recipe.

Does a person has to use an eggplant as long as that person doest like it?But it looks good though.
