Putting veggies in a casserole was the only way I could get my daughter to eat them when she was young...Now she makes this .

Ingredients
- 1 1/2 cups macaroni
- 1 1/2 lb. hamburg
- 1 small eggplant, peeled and chopped into 1/2 i nch pieces
- 1/2 cup chopped onion
- salt and pepper to taste
- 1/2 tsp. basil
- 1 cup sour cream
- 1 cup shredded cheese(I use Italian blend or even cheddar sometimes)
Directions
- Cook pasta according to directions
- Brown hamburg and onion.
- Drain off fat
- Add remaining ingredients and macaroni
- Put in a buttered casserole dish and bake, uncovered for 45 minutes at 350
