Ingredients
  • 1-2 large bunches of Swiss chard (I personally use the rainbow if I can find it. Makes a very pretty dish)
  • 2 12-oz. packages of your choice of tortellini
  • 1 Tbsp. olive oil
  • 3-5 cloves garlic (depends on how much you like garlic), chopped
  • 2-3 shallots or 2 small onions, chopped
  • 1/2 to 1 cup of chicken or vegetable broth

Directions
  1. Boil some water.
  2. Meanwhile, heat the olive oil in a large skillet or sauté pan
  3. When the water boils, add the tortellini and cook as directed
  4. Drain, and keep warm
  5. Cook the garlic and shallots until soft
  6. While they’re cooking, chop up the chard
  7. Add the chopped chard stems to the garlic and shallots and begin to let it soften
  8. Then begin adding the leaves, letting them wilt before adding the next handful
  9. About halfway through adding all the chard, pour in enough broth to moisten everything and make it saucy
  10. You want about 1/8 inch of broth in the bottom of your pan
  11. Continue sautéing the chard and letting the broth cook down until the broth coats the chard-shallot-garlic mixture
  12. Toss in the tortellini, mix well and serve immediately
  13. Top with grated Parmesan and salt and pepper to taste.

Thank you for this recipe. Dr took away most of my greens but said I could have chard, kale and collards. I love chard, but never have tried mixing it with other ingredients. Will learn to now..
