How to make it

  • Melt butter in large heavy skillet over medium heat.
  • Add celery, carrots, onions, and almonds and cook until slightly softened, stirring ocassionally.
  • Mix in dill, bay and turmeric.
  • Bring 3 quarts of stock with wild and white rice to a boil in a large pot.
  • Reduce heat.
  • Add celery mixture to broth and simmer for 30 minutes, adding more stock if soup is too thick.
  • Add chicken and mushrooms.
  • Discard bay leaves and simmer for 10 minutes more.
  • Adjust for salt and pepper.
  • Serve and warm yourself up quite nicely.
