A Walk on the Wild Side Soup

- 1/2 stick of unsalted butter shopping list
- 4 celery ribs, diced shopping list
- 2 large carrots, diced shopping list
- 2 small onions, diced shopping list
- 1 medium leek, cleaned well and sliced shopping list
- 1/2 cup of slivered almonds shopping list
- 2 tbsp of fresh dill shopping list
- 2 bay leaves shopping list
- 1/3 tsp of turmeric shopping list
- 3 quarts of chicken stock shopping list
- 1 1/2 cups of wild rice shopping list
- 1/2 cup white rice shopping list
- 4 cups of diced cooked chicken shopping list
- 3 cups of sliced mushrooms shopping list
- 3/4 tsp of salt shopping list
- 1 tsp of ground black pepper shopping list
How to make it
- Melt butter in large heavy skillet over medium heat.
- Add celery, carrots, onions, and almonds and cook until slightly softened, stirring ocassionally.
- Mix in dill, bay and turmeric.
- Bring 3 quarts of stock with wild and white rice to a boil in a large pot.
- Reduce heat.
- Add celery mixture to broth and simmer for 30 minutes, adding more stock if soup is too thick.
- Add chicken and mushrooms.
- Discard bay leaves and simmer for 10 minutes more.
- Adjust for salt and pepper.
- Serve and warm yourself up quite nicely.
