Arroz Caldo - Chicken Rice Porridge

- 1 cup uncooked rice shopping list
- 4-5 cups water or chicken broth shopping list
- 4 pcs chicken shopping list
- 1/2 cup ginger, julienned shopping list
- 1 med onion, minced shopping list
- 2 gloves garlic, minced shopping list
- 2 tbsp fish sauce (adjust according to taste) shopping list
- pepper shopping list
- toasted garlic, minced (garnish) shopping list
- spring onion, chopped (garnish) shopping list
How to make it
- In a pot, boil chicken until cooked. drain. reserve stock.
- pour in the uncooked rice. add water if stock is not enough. bring to a boil.
- on a separate saucepan, saute garlic and onion. add chicken and ginger. cook for about 3-5 minutes, then pour into the pot with the rice and broth. stir.
- after it boiled, add fish sauce lower heat and continue simmering for about 20 minutes or until rice is cooked. add more broth or fish sauce if necessary. The mixture should have a soupy consistency when fully cooked.
- serve with toasted garlic and spring onion on top.
