Jalapeno Meat Loaf Recipe
This is a recipe that I cut from someplace and stuck in the back of a recipe book.. I've never made it but it looks good.. so I thought I would share. the description says it a very hot, spicy, moist meatloaf.

Ingredients
  • 2 eggs
  • 1 can ( 7 1/2 oz.) tomatoes with jalapenos (approx. 2/3 cup)
  • 2 TBSP. chili powder
  • 2 teasp. cumin
  • 1 teasp. salt
  • 1 cup fresh bread crumbs*****
  • 1 lb. lean ground beef
  • ***** for Gluten Free use gluten free bread

Directions
  1. In a medium bowl beat together eggs, tomatoes, seasonings and the bread crumbs
  2. add meat with hands mix lightly but thoroughly.
  3. shape into a loaf on a pie plate or put into a 8 x 4 inch loaf pan
  4. bake at 350 ' F for 40 to 50 mins. or until done and well browned.
