A wonderful recipe for zucchini.Light & fluffy,not dense,with lots of flavor.I have a hard time not eating all of them.I bet you could get kids to love these too.

Hi - I have made a very similar recipe for years and it's wonderful too and completely addictive. I use cooking onion instead of green onions (for more onion flavor), omit the jalapenos (hubby doesn't like 'em too hot). Would recommend this especially for vegetarians because they are almost a meal in themselves, just add a salad.
