A wonderful recipe for zucchini.Light & fluffy,not dense,with lots of flavor.I have a hard time not eating all of them.I bet you could get kids to love these too.

Ingredients
  • 3 medium zucchini,grated
  • 1/2 cup green onions,chopped
  • 1/2 cup carrots,grated
  • 1/2 cup green peppers,chopped
  • 1 medium jalapeno,deseeded & deribbed,minced
  • 2 cloves garlic,minced
  • 2 cups cracker crumbs,or bread crumbs
  • 2 Tbls.flour
  • 1 tsp.baking powder
  • 3/4 tsp.salt
  • 1/8 tsp.pepper
  • 2 eggs beaten

Directions
  1. In a bowl,combine first 11 ingredients;mix well.
  2. Stir in eggs.
  3. Form into patties
  4. Fry in non-stick pan,over medium heat for 10 minutes on each side,til lightly browned.
  5. (I do add some oil to pan)
  6. Good served with applesauce & sour cream,or Ranch dressing

Sola, these look awesome! I'm going to try to tweak them a little to make them gluten free for my daughter-in-law, but I will enjoy them just as they are. Great post!

I have made these a few times, could you please tell me what I may be doing wrong, they seem
very loose and if I put too much bread crumbs they get mushy and do not cook all the way thru,
Any help would be helpful as these have become a hubby favorite,

Hi - I have made a very similar recipe for years and it's wonderful too and completely addictive. I use cooking onion instead of green onions (for more onion flavor), omit the jalapenos (hubby doesn't like 'em too hot). Would recommend this especially for vegetarians because they are almost a meal in themselves, just add a salad.
