How to make it

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 8x4 inch loaf pan.
  • In a large bowl, mix together the ground chicken, eggs, corn tortilla crumbs, salsa, salad dressing, and all of the seasonings. Pack into the prepared loaf pan (I like using a stone loaf pan).
  • Bake for 45 minutes in the preheated oven. Top with onions and salsa and cook for an additional 15 minutes.

    You got my attention, I am going to try it!!
    I am going to try a warm red chili sauce and a chilled salsa verde with it, and by all means only a full-fat Ranch.

    craners ate it and said...
    I like meatloaf anyway but couldn't we all use a different take on it...lol, did you come up with this on your own. To add tortillas is pretty genious because it would give it that mexi feel. Great recipe Dawn. My grandmother used a recipe where she had cream cheese in the middle and I thought it would suck but it was soooo good. It taught me to be more open with food and just TRY IT!
