Chicken Enchilada Meatloaf

- 1 pound ground chicken shopping list
- 2 egg whites shopping list
- 3 corn tortillas put thru a food processor shopping list
- 3 tablespoons salsa (I like homemade w/ roasted red bell peppers) shopping list
- 2 tablespoons low-fat Ranch-style salad dressing shopping list
- 1 tablespoon chili powder shopping list
- 1/4 teaspoon garlic powder shopping list
- 1/4 teaspoon onion powder shopping list
- 1/4 teaspoon crushed red pepper flakes shopping list
- 1/4 teaspoon dried oregano shopping list
- 1/2 teaspoon paprika shopping list
- 1 onion, thinly sliced shopping list
- more salsa shopping list
- 1 1/2 teaspoons ground cumin shopping list
How to make it
- Preheat the oven to 350 degrees F (175 degrees C). Grease an 8x4 inch loaf pan.
- In a large bowl, mix together the ground chicken, eggs, corn tortilla crumbs, salsa, salad dressing, and all of the seasonings. Pack into the prepared loaf pan (I like using a stone loaf pan).
- Bake for 45 minutes in the preheated oven. Top with onions and salsa and cook for an additional 15 minutes.
