Hills And Valleys Coffee Cake

My mother would make this coffee cake when we visited – my girls loved warm coffee cake for breakfast (something they never got at home!), and my mother was happy to fulfill their wishes. This makes a very moist, gooey coffee cake, and when the coffee cake comes out of the oven, you’ll know why it's named Hills and Valleys!
Ingredients
- (NOTE: since I can no longer find applesauce cake mixes, I would suggest you try a yellow, butter or banana cake mix and add ½ teaspoon cinnamon and use applesauce instead of water when preparing the batter…I tried using spice cake mix, but it was too spicy for me) shopping list
- 1 box applesauce cake mix shopping list
- ¾ cup water (or applesauce if you are using something other than applesauce cake mix) shopping list
- ⅓ cup vegetable oil shopping list
- ½ teaspoon vanilla extract shopping list
- 2 tablespoons butter, melted shopping list
- ¼ cup brown sugar shopping list
- ½ teaspoon cinnamon shopping list
- ⅓ cup chopped pecans shopping list
- ½ cup coconut shopping list
- glaze (optional): shopping list
- ½ cup powdered sugar shopping list
- ¼ teaspoon vanilla extract shopping list
- 3 to 4 tablespoons milk shopping list
How to make it
- Mix cake mix, water, oil and vanilla together; reserve 1/3 cup for topping. Pour remaining batter into a greased 9x13 pan.
- Mix reserved cake batter with butter, brown sugar, and cinnamon until crumbly.
- Add nuts and coconut; the topping is quite moist, so it's difficult to sprinkle it over the batter. I just drop it by spoonfuls and then gently spread it a bit with fork tines - works best for me.
- Bake at 350 degrees for 35 to 40 minutes.
- While it’s baking, prepare the glaze by beating ingredients together, adding milk to thin it enough to drizzle over coffeecake.
- Remove coffeecake from oven and drizzle with glaze immediately - the heat from the coffeecake will melt the glaze and allow it to soak into it, creating a deliciouisly gooey topping.
- NOTE: the glaze is optional - the coffeecake is good with OR without it, so just go with your preference.

Hummm, now I'll have to look for Applesauce cake mix, haven't seen any... but I FOUND Pinapple upside down cake mix, I bet I could use that one if I can't find the Applesauce mix.. got my 5... sounds so gooooood

Krum... I love coffeecake.... and I want to try this.... but Im not sure Ive seen Applesauce Cake Mix down here... I know we are in the sticks..lol
