Yorkshire Chicken Recipe
Very old recipe combining yorkshire bread pudding and chicken. May seem like work when reading recipe but isn't really. Try not to open oven while cooking or it may sink.

Ingredients
  • 1/3 cup flour
  • 2 tsp. salt
  • 11/2 tsp. dried sage
  • 1/4 tsp. pepper
  • 21/2-3 lbs. chicken
  • 1/4 cup shortening
  • 1/8 tsp. pepper
  • 1 cup flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 3 well beaten eggs
  • 11/2 cups milk
  • 1/4 cup softened butter
  • 1/4 cup parsley

Directions
  1. Combine first four ingredients and coat the chicken pieces with them.
  2. Brown in shortening. Place in greased casserole.
  3. Sift flour, baking powder and salt and set aside.
  4. Beat eggs, milk, butter and parsley in a bowl and gradually beat in the flour.
  5. Pour over chicken and bake at 350 degrees for and hour.
  6. Adjust time if using skinless, boneless chicken

Oh I am so glad you posted this! I had a recipe for this in a very old cook book but could never come upon it again. (Too many cook books.) At any rate THIS IS IT! Thanks so much for finding this. It's wonderful!
