  • 40 asparagus spears, trimmed (about 2 lbs.)
  • cooking spray
  • ΒΌ tsp. kosher salt
  • 1/8 tsp. black pepper
  • 2 tbsp. butter
  • 2 tsp. soy sauce
  • 1 tsp. balsamic vinegar

Directions
  1. Preheat oven to 400 degrees F.
  2. Arrange asparagus in a single layer on a baking sheet.
  3. Coat asparagus with cooking spray.
  4. Sprinkle with salt and pepper.
  5. Bake at 400 degrees for 12 min. or until tender.
  6. Melt butter in skillet until lightly browned.
  7. Remove from heat and stir in soy sauce and vinegar.
  8. Add asparagus and toss. Makes 8 servings.
  9. Tip: When choosing asparagus, note that the fresh ones are firm not soft, at the tips. Bend a spear until it snaps and discard the bottom part. If asparagus is rather thick, use a vegetable peeler on the stems.
