Ingredients

10fl oz Cream

3 Egg yolks

9oz Dark Chocolate bits

3 Tbls liqueur (cointreau, kahlua, brandy or malibu)

Directions

Heat the cream until its just about to boil making sure to stir. Throw it in the blender with all the other ingredients and whizz until the racket stops! Pour into little espresso cups or liqueur glasses and chill in the fridge for at least 3 hours or preferably 8 hours

I don't understand why you bother to heat the cream? Is it so the yolks might cook just a bit by association? I'm not being entirely serious here, but I am very protective of my good booze. I never let it near heat because the first thing to evaporate is the alcohol.
