How to make it

  • In a large mixing bowl combine all the ingredients and mix well.
  • Set aside 1 to 1 1/2 cups of the sauce.
  • Marinate the chicken overnight.
  • Dry the chicken off with paper towels
  • Season with lite salt and pepper and lube with olive oil.
  • Grill the chicken on a gas or charcoal grill.
  • Turn the chicken every 3-4 minutes and baste with sauce.
  • The sugar in the sauce will burn if you don't turn and baste often.

    I could not find pineapple concentrate so I made my own by boiling down 2 cups of pineapple juice until it was one cup of concentrate. I used all chicken drumsticks, 12, which was 2.5lbs. There was even sauce leftover so I think 3lbs of chicken is best to use all the sauce up, or reduce the amounts. I also reduced the soy sauce by a 1/4 cup and it worked out great for my tastes.
    I did this in my oven at 425F on convection, basting with the sauce every 8 minutes while turning, it took 30 minutes total. Before basting with the sauce, I cooked it down on the stove top to thicken it slightly so it was easier to baste with, and reserved a tiny bit for dipping.
    A great tasting teriyaki type sauce! I love all the garlic and ginger flavor, the whole family enjoyed it. :)

    Thanks for posting this recipe! I will try it for sure. I remember driving from Makaha to town on the weekends and as you go through Nanakuli they would have their fund raising Huli Huli Chicken sale. I would open the window and take it all in. Of course on the way home I would HAVE TO STOP and buy some. Broke da mout Ono!!!!!!!!!!!!!
