Ingredients
  • 8 -10 oz potatoes, cut into 1 inch cubes.
  • 1 1/4 cup grated peeled potatoes, squeezed dry in a kitchen towel.
  • 3/4 cup all purpose flour.
  • 1/2 tsp baking powder.
  • 1/2 tsp salt.
  • pinch cayenne pepper.
  • 1/2 cup milk.

Directions
  1. Cook the cubed potato in a saucepan of boiling salted water until tender. Drain, return to the saucepan and mash.
  2. Mix the mash with the grated potato, flour, milk, baking powder, cayenne and salt.
  3. Heat a heavy pan until hot, brush with oil and drop heaped tablespoons of the mixture on to the pan and flatten with the back of a spoon or spatula into 2 inch rounds about 1/2 in thick.
  4. Cook over medium heat for about 3 minutes until the boxty is golden brown on the bottom and slightly puffed.
  5. Serve with grilled bacon and eggs for breakfast.

These sound really delicious.....


I love Boxty Cakes. They are delicious and a great comfort food. They are simply perfect made as shown, but I also like to add chopped scallions, minced jalapeno and/or roasted garlic occasionally, depending on my mood and what I'm serving them with. Grated cheese in the mix is also pleasing. Great recipe - great post. Thanks so much!
