Boxty Cakes

- 8 -10 oz potatoes, cut into 1 inch cubes. shopping list
- 1 1/4 cup grated peeled potatoes, squeezed dry in a kitchen towel. shopping list
- 3/4 cup all purpose flour. shopping list
- 1/2 tsp baking powder. shopping list
- 1/2 tsp salt. shopping list
- pinch cayenne pepper. shopping list
- 1/2 cup milk. shopping list
How to make it
- Cook the cubed potato in a saucepan of boiling salted water until tender. Drain, return to the saucepan and mash.
- Mix the mash with the grated potato, flour, milk, baking powder, cayenne and salt.
- Heat a heavy pan until hot, brush with oil and drop heaped tablespoons of the mixture on to the pan and flatten with the back of a spoon or spatula into 2 inch rounds about 1/2 in thick.
- Cook over medium heat for about 3 minutes until the boxty is golden brown on the bottom and slightly puffed.
- Serve with grilled bacon and eggs for breakfast.
