Cherry Almond Muffins Recipe
This recipe also depends on how large you make your muffins, I like to make the really big one's so I don't get as many as if you use the standard size cupcake pans. Very yummie, hope you enjoy.

Ingredients
  • 1 cup granulated sugar
  • 1/2 cup butter or margarine softened
  • 2 eggs
  • 1 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 cup chopped almonds
  • 1 jar maraschino cherries chopped and drained

Directions
  1. In large bowl cream sugar and butter, Add eggs, one at a time,
  2. beating well after each addition.
  3. Blend in almond extract.
  4. Combine dry ingredients; blend into creamed mixture alternately with the buttermilk.
  5. Stir in the almonds and cherries.
  6. Pour into greased muffin tins or paper-lined tins.
  7. Bake at 350 degrees F for 25 to 30 minutes or until a wooden pick comes out clean.
