Ingredients
  • House Seasoning:
  • 1 c salt
  • 1/4 c black pepper
  • 1/4 c garlic powder
  • Collards:
  • 1/2 lb smoked turkey wings
  • 1 T House Seasoning
  • 1 T seasoned salt
  • 1 T hot red pepper sauce
  • 1 large bunch collard greens
  • 1 T butter

Directions
  1. House Seasoning:
  2. Mix ingredients together and store in an airtight container for up to 6 months.
  3. Collards:
  4. In a large pot, bring 3 quarts of water to a boil and add smoked meat, House Seasoning, seasoned salt and hot sauce.
  5. Reduce heat to medium and cook for 1 hour.
  6. Wash the collard greens thoroughly.
  7. Remove the stems that run down the center by holding the leaf in your left hand and stripping the leaf down with your right hand.
  8. The tender young leaves in the heart of the collards don't need to be stripped.
  9. Stack 6 to 8 leaves on top of one another, roll up, and slice into 1/2 to 1-inch thick slices.
  10. Place greens in pot with meat and add butter.
  11. Cook for 45 to 60 minutes, stirring occasionally.
  12. When done taste and adjust seasoning.

Hey there! My hubby does the greens at our house. I don't know what he does unless he puts his foot in it! Collard greens are good. He eats his greens & cornbread with his fingers. He says it tastes better that way! We use smoked turkey necks and they are great. Thanks for posting, Jett
