This is so refreshing and satisfying! After I had had a surgery and my GI tract was very delicate, this put me right when nothing else would.

Ingredients
  • ½ lb. orzo, cooked, rinsed, and really really well-chilled. Really.
  • 1 15-oz. can of garbanzo beans
  • 4 tomatoes, cut into eighths, or
  • 1 pint sweet cherry tomatoes, halved
  • 1 cucumber, peeled, halved, sliced
  • 1 bunch scallions, sliced thin
  • ¼ lb. olives
  • ½ feta cheese, not crumbled much
  • *Combine these ingredients for the dressing:
  • ¼ c. lemon juice (at least)
  • ½ c. olive oil
  • 2 T chopped parsley
  • 2 T chopped fresh marjoram
  • ½ c. julienned basil (at least)
  • 2 T red wine vinegar
  • salt to taste, and the merest pinch of sugar, not honey
  • Pile on a bed of arugula or red leaf lettuce or baby greens.

Directions
  1. *Combine the first 7 ingredients and chill.
  2. *Combine the next 7 ingredients for the dressing.
  3. *If you can't find fresh marjoram, double the basil.
  4. salt to taste, and the merest pinch of sugar, not honey
  5. Shortly before serving, gently toss the chilled salad with the dressing, which you have not added all at once, gauging how much it needs. Pile on a bed of arugula or red leaf lettuce or baby greens.
