Pita Bread The Easy Way

- 3 cups flour (I use 1/2 all purpose and 1/2 whole wheat) shopping list
- 1 Tablespoon nonfat dry skim milk powder shopping list
- 6 Tablespoons oil (olive oil gives a lovely flavour) shopping list
- 1 Tablespoon instant yeast shopping list
- 1-2 teaspoons sugar shopping list
- 1/2 teaspoon salt shopping list
- 1-1/2 cups water shopping list
How to make it
- Mix yeast, water and sugar.
- Set aside.
- In a large bowl, combine flour, dried milk and salt.
- Pour oil and water and mix well.
- You might require more flour or water, depending on the absorbency of the flour.
- Knead dough gently and not for too long.
- Divide into 18 egg sized balls.
- Place on a floured surface, cover and let rest for 25 -30 minutes.
- Roll one ball out and cook it in a skillet until "bubbles" form on top.
- Flip pita over and cook the other side for a few more minutes.
- Keep bread warm by wrapping in a towel or placing in a pre-heated 250 degree oven while cooking the rest of the bread.
- These freeze very well.
- Note: I like to add a small handful of chopped or sliced green olives to the dough.

Great easy recipe Lor, thanks. Try frying the flattened dough , just make it smaller, it puffs and browns fast , just fry as many as you need to use, as leftovers don't taste as delicious when heated.
