Easy Falafel

- 2 cups of dried chickpeas, soaked in water for 12 hours or overnight shopping list
- Crumbs from 2 slices of white bread shopping list
- 5 cloves of garlic, minced or finely chopped shopping list
- 2 tsps. baking soda shopping list
- 1/3 cup fresh parsley, chopped shopping list
- 1/2 cup chopped coriander shopping list
- 1/2 small - medium onion shopping list
- 1 teaspoon cumin shopping list
- 1 teaspoon paprika shopping list
- salt, pepper shopping list
- oil for deep frying shopping list
How to make it
- Rinse the soaked chickpeas and put them in a food processor with garlic, onion and spices.
- Grind until you get a rough moist texture.
- Add a little water if needed.
- Move the mixture into a large bowl, add the rest of the ingredients and set aside, covered for 45 - 55 minutes.
- Warm the oil - it should be hot, not boiling.
- Add the baking soda to the mixture and knead a little.
- Wet your hands and shape into little balls or I take two spoons and shape them that way.
- They should be about the size of an apricot.
- Fry until they turn a deep golden brown shade.
- Serve hot!
