When I was pregnant , I couldn't get enough Indian Pudding....Yesterday I read the newspaper and this recipe was in it....The best I've ever had.

Ingredients
  • 4 cups milk
  • 1/2 cup cornmeal
  • 2/3 cup molasses
  • 2 eggs, lightly beaten
  • 1/4 tsp. each of ground ginger, nutmeg, and cinnamon

Directions
  1. Preheat oven to 275
  2. Butter a souffle dish, set aside
  3. Bring a pot of water to a boil making ready for water bath to steam pudding
  4. In saucepan, bring milk to a boil over medium heat
  5. Add cornmeal very slowly, whisking constantly.
  6. Simmer over low heat, whisking all the while for 5-7 minutes
  7. Remove from heat and stir in molasses
  8. Cool for 5 minutes and add eggs and spices.
  9. Pour batter into buttered dish and set into larger baking dish
  10. Place on baking sheet on rack in the oven
  11. Add boiling water to larger baking dish up to level of pudding
  12. Bake 2 hours or until pudding is firmly set.
  13. Rest for 30 minutes.
  14. This is fantastic with vanilla ice cream
