Ingredients

How to make it

  • Preheat oven to 275
  • Butter a souffle dish, set aside
  • Bring a pot of water to a boil making ready for water bath to steam pudding
  • In saucepan, bring milk to a boil over medium heat
  • Add cornmeal very slowly, whisking constantly.
  • Simmer over low heat, whisking all the while for 5-7 minutes
  • Remove from heat and stir in molasses
  • Cool for 5 minutes and add eggs and spices.
  • Pour batter into buttered dish and set into larger baking dish
  • Place on baking sheet on rack in the oven
  • Add boiling water to larger baking dish up to level of pudding
  • Bake 2 hours or until pudding is firmly set.
  • Rest for 30 minutes.
  • This is fantastic with vanilla ice cream
