Viennese Cucumber Salad

- 2 large seedless cucumbers; ~ 2 lbs shopping list
- 1 Tbsp salt (I like kosher or sea salt) shopping list
- 1/3 cup white wine vinegar shopping list
- 1/4 cup water shopping list
- 2 tsp sugar shopping list
- 1(+) garlic clove, pressed or minced shopping list
- 1 tsp dill seed shopping list
How to make it
- Score cucumbers lengthwise with a fork or zester. Slice thin (mandoline or slicing disk on food processor works great here). In a large bowl, toss cucumbers with salt. Let stand for 1 hour.
- In a small saucepan: mix vinegar, water, sugar, garlic, and dill seed. Bring to a boil, stirring until sugar is dissolved, then let this dressing cool.
- Place cucumber in a colander, and rinse under cold water, then drain them well. Use paper towels to "squeeze" out any excess liquid.
- In a nice bowl, combine cucumbers with the dressing, cover, and allow to chill and marinate 1 to 2 hours in the refrigerator. Best if served after 1 hour.
- Fix sandwiches, invite a friend or two, and enjoy. Wine is highly recommended here also.
