Ingredients
  • 2 large seedless cucumbers; ~ 2 lbs
  • 1 Tbsp salt (I like kosher or sea salt)
  • 1/3 cup white wine vinegar
  • 1/4 cup water
  • 2 tsp sugar
  • 1(+) garlic clove, pressed or minced
  • 1 tsp dill seed

Directions
  1. Score cucumbers lengthwise with a fork or zester. Slice thin (mandoline or slicing disk on food processor works great here). In a large bowl, toss cucumbers with salt. Let stand for 1 hour.
  2. In a small saucepan: mix vinegar, water, sugar, garlic, and dill seed. Bring to a boil, stirring until sugar is dissolved, then let this dressing cool.
  3. Place cucumber in a colander, and rinse under cold water, then drain them well. Use paper towels to "squeeze" out any excess liquid.
  4. In a nice bowl, combine cucumbers with the dressing, cover, and allow to chill and marinate 1 to 2 hours in the refrigerator. Best if served after 1 hour.
  5. Fix sandwiches, invite a friend or two, and enjoy. Wine is highly recommended here also.

I made this today and wow.. They are like lays potato chips.. there is NO way you can only eat one. YUMMY This will be a regular in my house.. Perfect snack!
